NUTTY CHOCOLATE CREAM CHEESE PIE

box (41/2 ounces) chocolate wafers

cup toasted almonds

tablespoons (1/2 stick) unsalted butter,
softened

ounces bittersweet chocolate

(3-ounce) package cream cheese

cup Kahlúa or other coffee liqueur
|
|

cup heavy cream, cold (divided use)
|
|
Place wafers and almonds in food processor and process until
finely chopped into small crumbs. You should have about 1 cup.
Add butter and process until well combined. Pour crumb mixture
into 10-inch pie pan or 11-inch tart pan with removable bottom.
Cover with plastic wrap and use fingers to press crumbs together
to form crust on bottom and sides of pan. Remove and discard
plastic wrap. Refrigerate 30 minutes.
Chop chocolate and cream cheese into ½ -inch cubes and place in
stainless-steel mixing bowl. Pour Kahlúa and 3/4 cup heavy cream
into small saucepan. Heat to boiling over medium heat, and pour
hot cream mixture over chocolate and cream cheese cubes in
stainless bowl. Allow chocolate to soften for several minutes.
Use immersion blender or electric mixer to beat mixture until it
becomes smooth. Cover bowl with plastic wrap and set aside to
cool to room temperature.
When cooled, pour filling into cooled crust; spread to even and
smooth surface. Cover with plastic wrap and refrigerate for at
least 1 hour. Also chill small mixing bowl for preparing whipped
cream.
About 1 hour before serving time, pour remaining 1 cup cold
heavy cream into chilled mixing bowl. Whip with whisk or
electric mixer until soft peaks form. Cover with plastic wrap
and refrigerate until serving time.
Remove pie from refrigerator about 20 minutes before serving.
Slice into wedges and garnish each with a dollop of whipped
cream; serve chilled. Makes 8 servings.

Limit time in the
midday sun-
The sun's rays are
strongest between 10am and 4pm.
Seek shade-
It's better than being fully exposed
to the sun, but keep in mind that
shades structures do not offer
complete protection.
Wear a Hat
- The wide brim protects
areas of your heads and face that
are prone to overeposure.
Cover up
- Wear tightly woven,
loose-fitting, full length, clothing
to protect your skin from UV rays.
Wear sunglasses that
block 99-100% of UV rays
- Exposure to UVA and UVB rays can
cause cataracts and other eye
damage.
Always use sunscreen -
Choose one with an SPF of 15 or
higher and reapply it at least every
two hours.
